Rock Cakes with
Raspberry Jam

Baking is brilliant fun for all the family and these tasty treats are so easy to make and great fun for the children to get involved with too. Eat while they are still warm from the oven or leave to cool completely….if you can wait that long!

You Will Need

25g plain flour
100g cubed butter
1 tsp baking powder
4 tbsps raisins
1 large egg
50g dark brown sugar
1 tsp milk
6 -8 heaped tsps. raspberry jam


  1. Preheat the oven to 180°C/Gas 4.
  2. Put all the ingredients except the jam into a large mixing bowl and using your hands, combine everything.
  3. Divide the mixture into six huge rock shaped cakes. Then using your thumb, make an indentation on the top of each one and put a heaped teaspoon of jam into it.
  4. Place the cakes onto a greased baking tray and pop into the oven for 15 mins. Leave to cool before eating, if you can wait!
